It is the difference between gastronomy and food.

Portuguese cooking is dominated by shellfish and seafood, mainly due to its rich coast full of abundant sealife.

Normally fish is grilled or fried, and served accompanied by boiled potatoes and a vegetable or a side salad.

 

Cod fish cakes

Preparation  

Two steps

First:

1- Soak 4 or 5 slices of cod fish overnight. The next day pour off old water and add new  enough to cover the fish.

2-If, after, the fish is still salty change the water for more some hours.

3- Make sure the cod is not too salty.

Second:

1- Boil the fish.

2- Drain, discard the skin and bones and flake it as much as you can with your fingers, then with a fork, to reduce it to threads.

2-Boil 1kg of potatoes.

3- Mash them and set aside.

4- Mix the fish with the mashed potatoes and add 3 eggs, one by one, and then  1 small onion, 2 tablespoons of  parsley, very finely chopped .

5-Taste for salt .

6-The mixture should be quite stiff, enabling a spoon to stand up.

7- With two tablespoons shape the cakes like large eggs and place in the hot oil (370°F/190°C), turning them three or four times to get nicely browned.

8- When cooked, place them on kitchen paper, to absorb excess fat.

 

Mackerel with shrimps

Ingredients:  

700g mackerel

700g potatoes (sticks)

200g shrimps

1 packet of shrimp instant soup

1dl milk

3dl cream

tablespoon bread crumbs.

Preparation:
 

-Spread butter over a pirex

-Put the pieces of mackerel in the middle.

-Put the potatoes, after fried, around the fish.

-Add the shrimps.

-In a casserole put the milk and the shrimp soup, when it becomes creamy soup, add the  fresh cream.

-Cover all the ingredients with the mixture and put some bread crumbs on it.

Put in the oven(190º) for 40m .

 

Cod fish with rice

Ingredients:

1 onion

1dl olive oil

1 red tomato

2 pieces cod fish

250g rice

6dl water

Salt (if necessary)

Pepper

parsley

Preparation:

-Put the olive oil in a pan

-Peel the onion chop it and add.

-When the onion becomes light brown join the cod fish cut in four pieces and the tomato

-Let it stew a little bit and add the hot water.

-As soon as the water starts boiling join the rice. Let it cook for about 12 m

-When ready spice it with parsley.

Decorate with parsley.


 

Sea rice

Ingredients:  

1l water

1,2kg freshmonkfish

2 onions

2 cloves garlic

1dl olive oil

100g bacon in pieces

1/4 yellow pepper

 ¼ red pepper

¼ green pepper

1dl white wine

2 tomatoes

1 tablespoon tomato pulp

300g rice

Salt

Pepper

Coriander

 

Preparation:
 

-Boil the water with salt and pepper.

-Add the fish in squares.

-When the fish is cooked take it out of the pan and set aside. Keep the water.

-Put the olive oil in a pan, add the chopped onions, garlic, bacon and paprika and let it stew for a while.

-Pour the wine and let it boil.

-Add the tomato cut in pieces and the pulp.

-Join the rice and the water you kept and cook for 10m.

-Add the fish and boil for 3 minutes.

Spread coriander on it, check the salt and serve.

Caldeirada (fish stew)

Ingredients:  

250g mussels

2kg different types of fish

1dl olive oil

4 onions

1,2kg potatoes

4 tomatoes

6 cloves garlic

1 green pepper

1dl white wine

parsley

salt

pepper

 

Preparation:

-Leave the mussels in salty water for about 1 hour.

-Cut the fish in pieces and mix it with salt and pepper and set aside.

-Pour the olive oil in a pan, then put the mussels, some slices of onion,  thick slices of potatoes and tomato and finally the fish.

 -Put some slices of onion,  thick slices of potatoes and tomato and finally the fish.

-Do the same again.

-Cover all with chopped garlic, parsley and pieces of paprika.

-Pour the wine on and add a little bit of olive oil.

-Add some shrimps if you like it.

Let it cook  slowly for about 20minutes.

 

 

Octopus with red wine

Ingredients:  

1 big octopus

2 onions

1 teaspoon vinagre

3 cloves garlic

1dl olive oil

1 teaspoon powder paprika

1 leave laurel

1,5dl red wine

1kg potatoes

Corn bread

Salt and pepper

 

Preparation:

-Clean the octopus.

-Put it in a pressure pan with the onion and the vinagre covered with cold water. Boil it for 20m.

-In another pan put the olive oil, join the onion in slices and chopped garlic.

-When they are light brown add the paprika powder, the laurel and parsley.

-When boiling add the wine.

-Cut the octopus in pieces and add it.

-Check the salt.

-Boil the potatoes without peeling them in a salty water.

-Peel the potatoes after cooked.

Serve the octopus with the potatoes and some slices of corn bread or any other type of bread.

 

Fish with pasta

Ingredients:  

2 cloves garlic

1 big onion

0,5 dl olive oil

1 leave laurel

150g  peeled tomato

1dl white wine

0,5 green paprika

0,5 red paprika

400g snowy grouper

400g grouper

300 g  pasta

1 tablespoon chopped coriander

salt

pepper

chili

 

Preparation:

-In a pan put the olive oil, the garlic and the onion. Let it get light brown

-Add the tomato, the wine and the paprika in pieces.

-Cut the fish in squares and mix with some salt.

-Join the fish to the previous preparation and pour water on it.

-Let it boil and spice it with pepper and chilli.

-Add the pasta and boil for 15m

-Check the salt.

-Cover with the coriander and serve.
